The no-cook method
One idea, three applications. The idea: take a product whose dose is printed on it, reduce it without heat if you need to, and fold it into something cold and already cooked, portioned onto individual plates rather than into a shared dish.
Nothing is heated, so nothing degrades unpredictably. Nothing is a batter, so nothing distributes unevenly. Each plate gets a dose you counted out.
Why reducing works and boiling does not
Several of these use a syrup reduced from a dosed drink. The rule is to reduce it cold or barely warm, over hours in a low oven with the door cracked, or simply by leaving an uncovered dish in the fridge overnight. Slow water loss concentrates the dose without cooking it off.
If you boil it, you are back to the problem in why food is harder: unknown losses, no way to compute the result.
1. Dosed cream, for anything
The most useful thing in this section.
Whip 4oz of cold heavy cream with a tablespoon of sugar to soft peaks, then fold in one 5mg can reduced to about 2 tablespoons (uncovered in the fridge for 24 hours, then stirred). Divide into four portions.
1.25mg a serving. Spoon it over coffee, berries, or a slice of cake nobody has to know is involved.
Fat and cold are the two things this technique needs, and cream is both.
2. Dosed vinaigrette
Whisk 3 tablespoons olive oil, 1 tablespoon vinegar, half a teaspoon mustard, salt, and one 2mg can reduced to a tablespoon. That dresses a salad for two.
1mg a serving. Dress the plates separately. A dressed bowl passed around the table is a batch again, and the person who takes the bottom of the bowl gets most of the dose.
3. Dosed chocolate sauce
Warm, not hot: 2oz dark chocolate melted gently over a bain-marie, taken off the heat, then stirred with one 5mg can reduced to 2 tablespoons once the chocolate has cooled to barely warm. Divide into four.
1.25mg a serving. Chocolate and cannabis share a lot of bitter, roasted character, and this is the pairing that tastes most deliberate rather than most tolerated.
The rules that make this safe
- Write the total on the container, along with how many portions it makes.
- Portion onto plates, never into a shared dish.
- Tell everyone, before they eat, in milligrams.
- Keep it out of the fridge door, which is the most reachable shelf in the house.
- Do not stack it with a drink without adding the two numbers together first. A 1.25mg dessert after a 5mg can is a 6.25mg evening.
The honest caveat
Every dose above assumes the reduction did not lose THC, which is an assumption and not a measurement. Cold reduction should lose very little, but we have not tested these in a lab and neither has anyone else. Treat the stated figures as a ceiling rather than a guarantee, which is the safe direction for the error to run.
