What to eat alongside

Two separate questions get tangled together here. One is about pharmacology and one is about dinner. They have different answers.

Eating first is a dosing decision

Food in your stomach slows absorption and flattens the arrival. The peak is lower and the onset is later, which is almost always what you want, and especially so the first few times.

The flip side worth knowing: later onset is when people redose. If you have eaten a full meal and feel nothing at the ninety minute mark, that is the meal working, not the drink failing. The two hour rule exists for precisely this window.

An empty stomach sharpens everything. Some experienced drinkers prefer it. It is not where anyone should start.

What actually tastes good next to these

Most THC drinks are some combination of bitter, herbal, citrus-forward and lightly sweet. That is a fairly specific flavour profile and it has opinions about what sits next to it.

Works well

  • Salt and fat. Olives, good crisps, aged cheese, anything fried. Salt suppresses bitterness, which lets the herbal notes read as aromatic rather than medicinal. This is the single most reliable pairing.
  • Citrus and acid. Ceviche, pickles, a sharp slaw. The drinks are already acidic and matching them keeps everything bright.
  • Herbs, out loud. Rosemary, thyme, basil, mint. The terpene overlap is real and a lamb chop with rosemary next to a grapefruit rosemary highball is a genuinely composed pairing rather than a coincidence.
  • Dark chocolate. Bitter meeting bitter, and it works for the same reason it works with coffee.

Works badly

  • Very sweet desserts. The drinks carry their own sweetness and the two stack into something cloying.
  • Heavy cream sauces. They flatten carbonation and mute the aromatics that are most of what you are paying for.
  • Anything spicy enough to need a drink. You will reach for the dosed can as a fire extinguisher and drink it in ninety seconds. This is a dosing hazard dressed up as a flavour note, and it is the one on this list that has actually caused problems.

A workable menu

Salted almonds and olives while the first low-dose drink lands. Something acidic and cold to follow. Dark chocolate at the end, with dosed cream if the evening is going that way and everyone has done the addition.
