Method

  1. Measure the shot with a jigger. This bottle holds several servings and the dose is per pour.
  2. Whisk the mustard, vinegar and spirit together first, then add the oil in a thin stream while whisking.
  3. Season, then dress four plates separately.
  4. Do not dress a shared bowl. The person who takes the bottom of the bowl gets most of the dose.

Why it works

This is the only plate here with no reduction step, which means no assumption about what survived it. A dosed spirit is already concentrated and already unheated, so the milligram figure on the bottle is the milligram figure in the dressing. The mustard is doing the real work otherwise: without an emulsifier the oil and the spirit separate and the dose sits in one layer.
