Method
- Measure the shot, then whisk it into the honey until they are one liquid. Honey will not combine into cold yogurt on its own.
- Fold the honey mixture through the yogurt until the colour is even. Streaks mean uneven portions.
- Divide into four cups, levelling each one against the others by eye.
- Top with the pistachios and chill for an hour.
Why it works
Yogurt is thick enough to hold a liquid dose in suspension, which is what makes it distribute evenly where a thinner base would let the spirit settle. Whisking into the honey first is not fussiness: a measured pour stirred straight into cold yogurt streaks, and a streaky mix is four different doses in four cups.
